Every sake and cocktail on this list is a memento from somewhere our chef has been. The drink menu is a travel journal — each item has an origin story that connects to a place, a person, or a moment. The bar isn’t an afterthought. It’s a co-star with the food.

Last Train to Osaka

Based on a drink our chef had at a standing bar near Shin-Osaka station at 11pm. He missed the last train. Worth it.

Fog on the Canal

Nigori Sake, Elderflower, Grapefruit, Rosemary

Named for the walk home from the canal on a fall night in Indy. Cold air, warm drink, nowhere you need to be.

Bangkok After Dark

A street stall in Bangkok. A drink that was either genius or an accident. We've been trying to recreate it ever since. This is close.

Dewazakura Oka Cherry Bouquet

A ginjo that smells like spring in a place you've never been. Our chef tried this at a tiny bar in Osaka on a Tuesday and spent the rest of the week trying to find more. Delicate, fruity, gone before you want it to be.

Hakkaisan Tokubetsu Junmai

Clean, precise, like cold water from a mountain stream. Pairs with literally everything on the menu. The Swiss army knife of sake.

Rich & Layered

Tedorigawa Yamahai Junmai

Earthy, complex, with a depth that unfolds across the glass. This is the sake for people who think they don't like sake. It'll change your mind.

Masumi Okuden Kantsukuri

Warm and round with notes of chestnut and dried fruit. Best served slightly warm. The bartender will get the temperature right.

Tozai Snow Maiden

A nigori (unfiltered) that's creamy, sweet, and completely unexpected. Drink it cold. Share it with someone who says they don't like sake. Watch their face.

Nanbu Bijin Shinpaku
